Rare Breed Pork and Niche markets. We are venturing in to our first ever retail operation and are looking for a highly motivated and highly competent candidate to be the driving force behind this project. You will run this concession independently from our Wholesale business. The Concession is based within the Bonnie and Wild Food hall inside the new Multi Billion-pound redevelopment of the St James Quarter, Edinburgh.

Role Purpose

Take full operational control of a brand-new butchers’ Concession in the heart of Edinburgh City Centre. Deliver a great customer experience through offering a quality product, developing a highly motivated team and sharing product knowledge with every customer.

Be passionate about local produce and develop relationships with producer group to have access to the highest quality, locally bred meat, game and poultry.

Build new revenue streams through product development, innovation, and sales.

We want to bring the art of Butchery to the forefront; whole carcass butchery will be top of the agenda. The successful candidate will not only serve our customers but deliver a shopping experience.

Candidates must be competent in their verbal communication to our customers.

Responsibilities & Experience.

  • Have full accountability for ensuring the highest levels of food safety are followed by all working in the concession, this includes all HACCP and CCP’s being maintained and enforced.
  • Place orders and receive deliveries.
  • Expertly cut and prepare all species including breaking down whole carcass, boning, trimming and preparing joints, portion control, dicing and mincing.
  • Maintain a clean and attractive display.
  • Prepare sausages, burgers & seasonal specials.
  • Introduce and develop a “ready to eat” section of pies & pastries with our 3rd Party baking partner.
  • Mentor and develop your team within the concession to help with their career progression.
  • Contribute to the marketing and social media presence of the shop.
  • Take full responsibility for all finance and stock controls including cash reconciliation, banking and stocktakes.
  • Ensure completion of all administration, paperwork and reporting as required.
  • Ensure team rotas are completed in a timely manner to suit business needs.
  • A minimum of 5 years’ Management experience working in a busy, traditional butchers’ shop or similar is required.

Concession grand opening 24th of June. We are looking to bring in a Manager approx. 3-4 Weeks prior to help the set up of the concession including ordering consumables, display planning, product planning, equipment ordering, staff training and the recruitment of the rest of the team!

We will be a 7 day per week operation. Operational Hours are:

Monday to Saturday 10am – 7pm

Sunday 11am – 6pm

Hours may vary depending on busy trading periods. You will be on a Shift Rotation working a minimum of 45 hours per week.

29 Days Annual Leave entitlement
