We are a 4th Generation family business, currently supplying wholesale meat to Scotland, England, Europe and the Far East. We specialise in Top end, Grass Fed, 100% Scotch Beef and Lamb. Rare Breed Pork and Niche markets. We are venturing in to our first ever retail operation and are looking for a highly motivated and highly competent Butchers to be the driving force behind this project. The Concession is based within the Bonnie and Wild Food hall inside the new Multi Billion-pound redevelopment of the St James Quarter, Edinburgh.

The Concession is based within the Bonnie and Wild Food hall inside the new Multi Billion-pound redevelopment of the St James Quarter, Edinburgh.

Role Purpose

Deliver a great customer experience through offering a quality product, generating customer engagement and sharing product knowledge with every customer.

Be passionate about local produce and develop relationships with producer group to have access to the highest quality, locally bred meat, game and poultry.

Build new revenue streams through product development, innovation, and sales.

The successful candidate will not only serve our customers but deliver a shopping experience.

Candidates must be competent in their verbal communication.

Responsibilities & Experience.

  • Ensure the highest levels of food safety are followed by all working in the concession, this includes all HACCP and CCP’s being maintained and enforced.
  • Maintain a clean and attractive display.
  • Prepare sausages, burgers & seasonal specials.
  • Introduce and develop a “ready to eat” section of pies & pastries with our 3rd Party baking partner.
  • Contribute to the marketing and social media presence of the shop.
  • Ensure completion of all administration, paperwork and reporting as required.

We will be a 7 day per week operation. Operational Hours are:

Monday to Saturday 10am – 7pm

Sunday 11am – 6pm

Hours may vary depending on busy trading periods. You will be on a Shift Rotation working Thursday & Friday 9am – 7pm one week and Saturday 9am-7pm & Sunday 10am – 6pm the other week and this will change weekly.

Experience not essential as training will be given, but a passion and enthusiasm for great produce is an absolute must! You will be the face of our business and customer engagement is paramount.

£9/hr to start
